First Brew

Steep one
- could barely fit 5 g in my little teapot
- Wet leaves have a smokey, almost tobacco scent to them
- clear pale yellow liquor with delicate scent
- First taste is very woody - probably because of the high stem content
- smokey flavour, elicits almost a prickly sensation in the mouth
- allowed the leaves to steam between steep 1 & 2
Steep two
- Much darker, golden liquor with a more complex aroma
- smokiness has intensified but there's a sweetness developing on the back of the palate
- interesting sensation in the mouth afterwards - not quite cooling
Second brew

Brewing temperature:: 80° C

- Used my new gaiwan
- Softer, more delicate flavour this time around
- Still slight hints of woodiness

Brewing method:: Westren

- Brewing this way results in a deep golden liquor with a sticky, jammy scent.
- Sweetness dominates with the woody flavours relegated to the background
- almost no trace of smokiness
